— Extra-fresh (less than 9 days) egg: 3 whites
— Brown granulated sugar: 80 g
— Real vanilla sugar: about 8 g
— Mascarpone: 250 g
— Ladyfingers ("biscuits à la cuillère" or "boudoirs" as 2nd choice), or savoiardi biscuits : 24
— Coffee "ristretto": 40 cl
