Soles filets "bonne femme" style

— Dover soles: 8 filets (w/o skin), ideally 48h after fishing
— Dry white wine: 10 cl
— Butter: 20 g
— Shallot: 1
— Button mushrooms (crimini): 200 g
— Fresh parsley (flat if possible): 1 bunch
