— Dover soles: 8 filets (w/o skin), ideally 48h after fishing

— Dry white wine: 10 cl

— Butter: 20 g

— Shallot: 1

— Button mushrooms (crimini): 200 g

— Fresh parsley (flat if possible): 1 bunch

Preheat the oven to 200 °C (390 °F).

Rinse, wipe, and chop the parsley leaves.
Peel, rinse, and slice mushrooms.
Peel and finely chop the shallot.
