Recipe
Rinse the sea urchins with fresh water.
Hold the mouth part up and, using scissors, remove the upper part.
Discard the water from the inside and release the "tongues" (with a fork or possibly with tweezers).

Purple sea urchins (Paracentrotus lividus) are rare because they are more fragile than classic Atlantic urchins. Buy them alive.
If you get some spine in the finger, take it out with caution with tweezers to avoid any infection.
