The name comes from the village of Neufchâtel-en-Bray, and dates at least from 1543. There was a big market in this village 3 times a week, where lots of cheese were sold.

On a young cheese the rind is edible. But if the cheese is quite ripe, some scrape a bit the rind (or remove it) not to mask the wine.

Beware about quantities. Studies show that eating while watching a screen might increase consumption by 20%.
