As starter reduce quantities

— Conger eel or monkfish or pollock or cod back: 1 kg

— Onions: 3

— Bacon: 8 thin slices

— Olive oil: 5 cl

— Fresh coriander: 10 seeds

— Rosemary (fresh if possible): 1 branch

Recipe

Peel and cut the fish into 16 pieces. Make sure to remove any bones.

Peel the onions, and cut them vertically in 4. (They will not fall into pieces)
Wrap each piece of fish with 1/2 slice of smoked bacon.
